Heritage Food Hunt with Chef Bryce Li

Singaporean are crazy about local food, so much so that it is a MUST HAVE in every hotel buffet.

The Orchard Cafe has been an icon of Orchard Hotel Singapore for three decades, and has had a loyal following of fans who always return for their favourite local fare.

As part of Orchard Hotel Singapore’s complete enhancement programme, The Orchard Cafe was closed for a complete refurbishment and will be reopening on 19 Nov 2018. Of course, the buffet spread has been given an upgrade too and we’re expecting lots of tasty creations by Executive Chef Bryce Li and his capable team.


In fact, while The Orchard Cafe was undergoing refurbishment, Chef Bryce took the chance to try the local fare all over Singapore's hawker centres. I was honored to be able to join him on his visit to Newton Food Centre to check out two local favorite dishes which is the BBQ Chicken wings and the BBQ Sambal Stingray for inspiration on what to create at The Orchard Café.


Below are the food (BBQ Chicken Wings and Sambal Stingray) from different stalls which we tried on that day. 




During the food hunt, Chef Bryce shared with us what he like about the dishes from the different stalls he had tried and he shared that he was going to  use all this inspiration for his upcoming dishes at The Orchard Cafe.

I'm sure you can't wait to try Chef Bryce's enhanced version of the BBQ Grilled dishes and tasty, spicy sambals too!

When the restaurant reopens on Monday, 19 Nov, you can look forward to a refreshed buffet experience called “A SIGNATURE CLASS BUFFET” featuring:


  1. Golden favourites – Braised Pork Belly Bee Hoon in Opah Leaf Pocket, Asian Noodles like Laksa, Thai Boat Noodles, Prawn Mee, Roast Meats selection from award-winning Hua Ting restaurant and Charcoal Grilled Satay
  2. Heritage-Inspired Local Creations – Grilled Barramundi in Kampong Sauce, Lobster Roti John, Wok-Fried Slipper Lobster in Salted Egg Yolk, Tau Kwa Pau with Tea-Smoked Duck, Chendol with Gula Melaka Ice
  3. Chef-curated cuisines from around the world such as: Roast Beef and Lamb, House-smoked Salmon, Crispy-Skin Roasted Pork Knuckle

Hotel Nikko Bali (Oceanfront Suite) - Best Hotel in Nusa Dua

Waking up to ocean view is no longer a dream when you stay in  Hotel Nikko Bali’s Oceanfront Suite .
