MALAY TOFU OTAH OTAH SERVES: 4 | PREP TIME: 15MINS | COOKING TIME: 20MINS INGREDIENTS 300gm 300gm 2 tbsp Pinch Fish fillet / kurau (minced) Prawns (shells removed, minced) Laksa Leaf (finely sliced) Salt and pepper Spice Mix: 1⁄2 pkt 90gm 30gm 2 tsp 10 oz 15gm 80gm 1⁄2 cup VitasoyTM Tofu-Soup beancurd (puree until fine) Candle nut Lemongrass (only the inner part) Tumeric powder Dried chilli Garlic Shallots Coconut cream GARNISHES 1⁄2 pkt 1 2 VitasoyTM Tofu-Soup beancurd (cubed) Big red shallot (thinly sliced) Calamansi (halved) STEPS 1. Combine all the ingredients for the spice mix together in a blender and puree until fine. 2. Pour the spice mix into a pot to fry until fragrant, then allow to cool. 3. When the spice mix has cooled, combine well with the fish, prawns, laksa leaves, salt and pepper. 4. Place a spoonful of the otah mix onto a banana leaf and gently top it with the tofu cubes. 5. VITASOY™ TOFU, APPLE & CHICKEN SALAD WITH TOFU-SESAME SEED DRESSING SERVES: 4-6 | PREP TIME: 20MINS INGREDIENTS 1 pkt Vitasoy™ Tofu-Soup beancurd (cubed) 40gm Green apple (core removed, cubed) 40gm Red apple (core removed, cubed) 50gm Celery (peeled, sliced) 150gm Roast chicken fillet (cut to bite size) Tofu-Sesame Seed Dressing: ½ pkt Vitasoy™ Tofu-Soup beancurd 3 tbsp Sesame seed paste 1 tbsp Honey 2 tbsp Ginger juice 1 tbsp Soya sauce Pinch Pepper GARNISHES 45gm Toasted almond flakes 65gm Yellow raisins (soak in warm water to soften) 55gm Alfafa sprouts 55gm Arugula leaves Pinch Sweet paprika Pinch Salt, sugar and freshly cracked pepper STEPS 1. Combine the ingredients for the tofu-sesame seed dressing and set aside. 2. Toss the ingredients together as shown and pour the dressing evenly over it. 3.
