For the first time, Executive Chinese Chef Liu Ching Hai and his team unveil the Imperial Feast reunion dinner in the Royal Pavilion Ballroom; an indulgent affair for generations to celebrate the special occasion together. Those looking for a much needed respite can relish in Four Seasons pampering with exclusive Chinese New Year room package – perfect for the upcoming festivities of this Spring Festival!

An Imperial Reunion

On February 7, 2016, guests are invited to indulge over a lavish feast in the Hotel’s Royal Pavilion Ballroom as Summer Palace recreates an imperial palace feasting experience fit for kings.  Kick off the Lunar New Year reunion dinner with a ceremonial toss to prosperity and usher in the Year of the Monkey with Chef’s Smoked Salmon Prosperity Yu Sheng.

The evening continues with a pampering feast as guests are served course selections of premium fortune dishes such as Mini Buddha Jump Over the Wall and Steamed Soon Hock in Light Soya Sauce, among others.  The pampering of the palate ensues as guests get their fill of blessings for the new year at various stations around the ballroom; featuring the delightful Peking Corner, Sea of Fortune, Longevity Fountain and Prosperity Mountain for auspicious favourites such as Braised Dried Oysters with Mushrooms and Sea Moss; Fried Glutinous Rice with Baby Abalone, Dried Shrimp and Cured Meat; and Chilled Pumpkin Cream with Aloe Vera and Sago.

The Imperial Feast reunion dinner menu is at $138 per person and starts from 6:30 p.m.

Fortune Menus
From January 25 to February 22, 2016, ten specially crafted menus (Gold, Prosperity, Fortune, Ru Yi, Peony, Imperial, Jade, Deluxe, Noble and Phoenix) by Summer Palace Chef Liu promise guests a memorable dining experience, combining auspicious favourites with exciting new dishes. Menus range from $998 to $3,988 for 10 people; menus are also available for four to six persons.

Indulge in the luxurious Braised Superior’s Bird’s Nest with Lobster ($118 per person), brimming with succulent lobster in a flavourful superior stock or Chef Liu’s signature Mini Buddha Jump over the Wall ($118 per person), a rich, aromatic soup replete with South African 7-head abalone, bird’s nest, fish maw, sea cucumber and dried scallops.

Other special Chinese New Year highlights include the Braised 12-head Australian Dried Abalone with Japanese Sea Cucumber ($328 per person), a prized delicacy that’s rich with flavour and remarkably chewy yet tender, among others.    A symbol of abundance and good fortune, the customary Yu Sheng gets a light, fruity and healthy twist with Chef Liu’s Summer Palace Yu Sheng ($168). At the heart of this Yu Sheng are three main ingredients: lobster, abalone and smoked salmon - a combination of three most meaningful ingredients in Chinese cuisine. Lobster is synonymous to the dragon of the sea which represents energy and liveliness; the smoked salmon embodies increasing prosperity; and the abalone defines good fortune - perfect for the traditional toss for harmony and prosperity. A blend of tropical fruits including lemon, orange, lime, pineapple, strawberry and a delightful apple jam is infused with the plum sauce to provide not only a healthy boost but also a uniquely delicious accompaniment for the big toss to usher in 2016.

With eight Yu Sheng alternatives, guests can also “toss up” success with the popular Nutritious Bird’s Nest and Pear Yu Sheng ($148) and Fresh Lily Bulb Vegetarian Yu Sheng ($88), among others.
